Refined Sugar-Free Seedy Granola

A nutritious, refined-sugar free granola that is packed with healthy ingredients like hemp seeds, chia seeds, pepitas, collagen and sweetened with maple syrup.

I made this granola topping with the specific intention of adding flavor and texture to my yogurt. I’ve been adding PB Fit to my Greek Yogurt for added protein and to give it even more nutitional value, this granola is packed with healthy ingredients without the added sugar. IT IS ADDICTING! I found myself snacking on it because it is the perfect blend of salty and sweet.

I named this recipe “Seedy Granola” because I used hemp seeds, chia seeds, pumpkin seeds and sunflower seeds, so it just seemed appropriate!

For this batch, I used almond butter, but peanut butter or sun butter would work just as great. In retrospect, I could have used more almond butter as a binder if I wanted to turn these into homemade granola bars, but with the intention of just using it for a topping, I preferred it to be clustered and not as packed.

Refined Sugar-Free Seedy Granola

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Ingredients

  • 1 1/2 cups old fashioned oats
  • 1 1/2 cups rice crisp cereal
  • 1/3 cup hemp seeds
  • 1/3 salted pepitas
  • 1/4 cup sunflower kernals
  • 2 tbsp chia seeds
  • 2 tbsp collagen powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup pure maple syrup
  • 1/4 cup nut butter of your choice (I used almond butter)
  • 1 tsp pure vanilla extract
  • 1/3 cup dark chocolate chips optional

Instructions

  1. Line a baking sheet with parchment paper, then set aside.
  2. In a large mixing bowl, combine all dry ingredients. Set aside.
  3. Then in a small sauce pan, add nut butter and maple syrup over medium heat until nut butter is smooth and mixture begins to bubble. Remove from heat, then stir in vanilla until well combined.
  4. Pour wet mixture into mixing bowl with dry ingredients. Mix until granola mixture is completely coated and thick.
  5. Let cool for a few minutes, then stir in dark chocolate chips.
  6. Spread mixture onto lined baking sheet. Press together with hands. Place in freezer for 15 minutes.
  7. Remove from freezer, then break pieces apart into clusters.
  8. Store in an airtight container.
