Creamy Cucumber Tomato Salad is a classic, light and refreshing Summertime favorite. This easy salad is made with sliced cucumbers & juicy grape tomatoes and tossed in Panera’s Creamy Buttermilk Ranch Dressing + Dip. It’s always a crowd pleaser and very seldom are there any leftovers!

We really enjoy fresh cucumbers and tomatoes, especially in the Summertime. We eat this meal at least once a week because we can have it prepped, mixed and on the table in less than 10 minutes.

All you need to do is chop and slice the vegetables and fresh herbs, mix in the mozzarella cheese and toss in Panera’s Creamy Buttermilk Ranch Dressing + Dip. It’s that easy!

Pro tip: Both cucumbers and tomatoes contain a lot of water so I find it works best to mix the dressing in right before you are ready to serve this dish.

Creamy Cucumber Tomato Salad

Ingredients

  • ½ cup Panera Creamy Buttermilk Ranch Dressing + Dip
  • 4 cups grape tomatoes, halved
  • 3 medium cucumbers, sliced
  • ½ cup white onion, slivered
  • 1 ½ cup mozzarella pearls
  • 2 tbsp fresh dill, finely chopped

Instructions

  1. In a large mixing bowl, toss prepared vegetables (cucumbers, tomatoes, onions) in Panera’s Creamy Buttermilk Ranch Dressing + Dip.
  2. Gently stir in mozzarella pearls and dill until well combined.
  3. Serve chilled.

Notes

Cucumbers can be peeled or unpeeled according to your preference. Leftovers can be stored (covered) in refrigerator for up to 3 days.

    I made this for my daughters wedding but without the mozzarella it was a hit the groom loved it still making this to this day and no buttermilk ranch to each their own mine is in point best believe. I love to cook
