Hot Honey Protein Pickle Egg Salad

February is Heart Health Month and I’m sharing one of my favorite ways to lighten up egg salad with Eggland’s Best.

We use Eggland’s Best because they have superior nutrition with 6 times more Vitamin D, 25% less saturated fat, 10 times more Vitamin E, and more than double the Omega-3, compared to ordinary eggs.


There is no reason to comprise taste when making a healthier version of a recipe. This Hot Honey Protein Pickle Egg Salad is packed with protein from cottage cheese and  eggs + brings in the flavor from dill pickles, hot honey and fresh herbs. With Spring fast approaching, this is a quick and easy dish to bring to Easter brunch, picnics or just a protein packed lunch!

Hot Honey Protein Pickle Egg Salad

Ingredients

  • 8 hard boiled eggs, peeled & chopped
  • ¾ cup low-fat cottage cheese
  • 3 tbsp hot honey
  • 3 tbsp Dijon mustard
  • 2 tbsp sweet relish
  • 3 large dill pickled, diced
  • 1 tbsp fresh dill, finely chopped
  • 2 tbsp fresh chives, finely chopped
  • ½ tsp paprika
  • Salt and black pepper to taste

Instructions

  1. In a large mixing bowl, add all ingredients. Mix until well combined.
  2. Cover and refrigerate for a minimum of 30 minutes before serving.
  3. *Serve as is, or on whole grain bagel or whole grain bread with lettuce.
