This Hot Honey Protein Pickle Egg Salad is packed with protein from cottage cheese and eggs + brings in the flavor from dill pickles, hot honey and fresh herbs. With Spring fast approaching, this is a quick and easy dish to bring to Easter brunch, picnics or just a protein packed lunch!
Hot Honey Protein Pickle Egg Salad
Ingredients
- 8 hard boiled eggs, peeled & chopped
- ¾ cup low-fat cottage cheese
- 3 tbsp hot honey
- 3 tbsp Dijon mustard
- 2 tbsp sweet relish
- 3 large dill pickled, diced
- 1 tbsp fresh dill, finely chopped
- 2 tbsp fresh chives, finely chopped
- ½ tsp paprika
- Salt and black pepper to taste
Instructions
- In a large mixing bowl, add all ingredients. Mix until well combined.
- Cover and refrigerate for a minimum of 30 minutes before serving.
- *Serve as is, or on whole grain bagel or whole grain bread with lettuce.
