White Chocolate Macadamia Nut Cookies
Do you have a go-to cookie to set out for Santa each year on Christmas Eve? Ours is White Chocolate Macadamia Nut! They are one of Jared’s favorites so when Emerson was a baby, we started that tradition and have enjoyed baking this recipe ever since. Once again, I am so surprised I haven’t shared this recipe yet, because it’s one of our most loved.
If you are a texture person, then you will love this cookie. The macadamia nuts have a buttery crunch and the white chocolate chips and golden dough are chewy and delicious.
For the sake of writing out a recipe for all you rule followers, it calls for 1 ¼ cup white chocolate chips. I think this is a reasonable amount, but 1 cup will do if you want less and 1 ½ cup will do if you want more!
Let’s dive into the recipe..
Ingredients
- ½ cup unsalted butter, softened
- ¼ cup brown sugar, packed
- ½ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 ¼ cup white chocolate chips
- ¾ cup roasted macadamia nuts, chopped
Instructions
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
- In a large mixing bowl, combine butter and sugars together. Then add the egg and vanilla and mix until well combined.
- In a separate mixing bowl, combine flour, baking soda and salt. Add into wet mixture 1 cup at a time. Then mix in white chocolate chips and macadamia nuts.
- Scoop dough into balls (about 2 tbsp) and place on prepared baking sheet 2 inches apart.
- Bake 10-12 minutes. Then cool on cooling rack for 10 minutes to finish setting.
