Garlic Roasted Green Beans & Shallots
Wow.. November sure did sneak up on us which means it’s officially time to start planning your Thanksgiving feast!
Today I am sharing a quick and easy side dish that is practically fool-proof for those that need to bring a dish for Thanksgiving or Friendsgiving, but don’t know how to cook or have the time to prepare something.
These Garlic Roasted Green Beans and Shallots are packed full of flavor while using minimal ingredients. Sometimes less is more and that is definitely the case for this recipe. It only requires 5 ingredients and minimal prep work.
Pro tip: use fresh green beans. It makes a difference in my opinion!
This recipe is also easy to double and triple for larger crowds for occasions such as Thanksgiving or Christmas dinner. It’s a bit of a healthier alternative to traditional green bean casserole.
We have this in our weekly dinner rotation as a side dish with baked chicken because it’s just so easy and delicious to not enjoy beyond holiday meals! If I’m being completely honest.. I could eat just a giant bowl of these Garlic Roasted Green Beans and Shallots by themselves as my entire dinner. That’s how yummy they are. I’m sure it helps that they are doused in olive oil, but those caramelized shallots are just so darn good!

Ingredients
- 2 lbs fresh green beans
- 1 large shallot, sliced
- 3 tbsp olive oil
- 2 tsp garlic powder
- sea salt to taste
Instructions
- Preheat oven to 450 F. Line baking sheet with foil, then set aside.
- Trim stems from green beans (if using fresh).
- In a large mixin bowl, toss green beans and shallots with olive oil and garlic powder.
- Arrange on prepared baking sheet.
- Sprinkle with salt.
- Roast for 22-25 minutes, or until beans are blistered and tender.
- Serve warm & enjoy!
