Mother Gingerbread Ice Cream Cookie Sandwiches
Cookie Week 2023: Day 3 we have a simple way to elevate prepackaged gingerbread cookie mix!
To stick with our holiday movie theme, these are named for Mother Ginger in The Nutcracker and the Four Realms. If you want a unique take on a classic gingerbread cookie or want to impress friends and family during the holidays, all you need is a package of gingerbread cookie mix (plus ingredients listed on the package), a tub of Cool Whip and cinnamon. That’s it!
I used a circle cookie cookie to shape the dough prior to baking, and again after the bake to make each circle even since gingerbread dough tends to spread.
While you can use any flavor of ice cream (or even frosting) for these sandwich cookies, I went with Cool Whip knowing how light they would make the cookie vs traditional ice cream. Cool Whip freezes well (and quickly) and was an easy vessel to add cinnamon for added flavor.
Ingredients
- 1 Package Gingerbread Cookie Mix + Package Ingredients (usually butter and egg)
- 8 oz Cool Whip
- 1 tsp Ground Cinnamon
Instructions
- Preheat oven to 350 degrees F. Line baking sheet with parchment paper, then set aside.
- In a stand mixer, prepare dough according to package instructions, then bake according to package instructions. Be sure to use a cookie cutter to make circular cookies.
- Allow cookies to completely cool on cooling rack. In tub of Cool Whip, stir in cinnamon until well combined. Then add a generous dallop to the inside of one cookie. Top with a second cookie to create a cookie sandwich.
- Freeze for 60 minutes. Serve cold and enjoy!
