Cinnamon Pecan Energy Bites

Every time I share an energy bite recipe, it goes viral on Pinterest, so I thought a new energy bite recipe for my first recipe of the new year would be a perfect fit!

I often make energy bites as a healthy snack option or pre-workout meal because of how incredibly easy they are to throw together and how many fun combinations you can make by interchanging ingredients. If you have oats and a nut butter, you can easily add any fillers and get creative with your flavors.

Depending on what I have on hand at the time, I’ll use either sunflower butter, almond butter or peanut butter. Most nut butters will work the same, but sunflower and almond are my favorites to use as binders.

Another way to customize your energy balls is with seeds and nuts. There are so many combinations of seeds and nuts to use. A few of my favorites are almonds, walnuts, pecans, brazil nuts, chia seeds, pepitas and sunflower kernals. I used pecans, pepitas and chia seeds in this particular recipe to add extra texture.

These Cinnamon Pecan Energy Bites are no bake, vegetarian, gluten-free and dairy-free. They are also a great protein rich snack. We personally eat these to fuel our workouts and runs!

Cinnamon Pecan Energy Bites

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: 16 balls

Serving Size: 1 ball

Ingredients

  • 1 cup quick oats
  • ½ cup no sugar added sunflower butter
  • 1/8 cup honey
  • 1/8 pure maple syrup
  • 1/3 cup pecans, crushed
  • ¼ cup pepitas
  • 1 tbsp chia seeds
  • 2 tsp ground cinnamon
  • ½ tsp pure vanilla extract

Instructions

  1. In a medium mixing bowl, combine all ingredients, then use hands to form a 1 inch ball.
  2. Store in an airtight container and refrigerate up to 1 week.
