How to take Jiffy Cornbread Mix to the Next Level

I recently asked family and friends what recipe they would like to get their hands on from my Dad’s catering menu. We thought we would get dozens of comments asking for his Macaroni and Cheese and while there were some Mac & Cheese requests, it was beat out by another dish of yellow deliciousness. His Cornbread recipe.
Before I start blabbering about how yummy this recipe is, I should probably say how incredibly easy it is to make. You do not need to be a culinary genius to pull this together. I have given out his cornbread recipe more times than I can count {because it’s just that good} so we thought, “why not put it out there for the whole world?” It is the most basic cornbread recipe, except he has a secret combination of ingredients that are a complete game changer! When I tell people what the secret ingredients are, they all say the same thing. “OMG that is genius, why didn’t I think of that?”
So what are these secret ingredients? Drumroll please….
SOUR CREAM and CREAMED CORN or as I used to call it when I was a kid, slimy corn. Lol at 5-year-old me.
The sour cream, combined with the creamed corn as opposed to a can of regular corn kernels makes the cornbread 10x’s creamier {hence the name creamed corn}. Even on day 2 and 3 of leftovers, this recipe stays moist, which a very good thing, considering the fact that nobody likes dry cornbread.

Here’s what tools you will need:
- 9×13 inch pan (or we like to use a cast iron skillet)
- Mixing Bowl
- Measuring Cup
- Spatula
- Whisk
- OPTIONAL: Hand Mixer
Here’s what ingredients you will need:
- 2 boxes of Jiffy Cornbread Mix
- 2 Eggs
- ¼ cup Olive Oil
- 8 ounces Sour Cream
- 1 can Creamed Corn
- OPTIONAL: Diced Jalapenos
Instructions:
- Preheat the oven to 350 Degrees
- Spray the inside of pan with cooking spray, and then set aside
- Add all 5 ingredients to the mixing bowl
- Beat together all of the ingredients until you reach a smooth and creamy consistency
- Pour the mixture into your pan
- Bake for 40 minutes or until golden brown and the toothpick that you have inserted comes out clean. If you are using a cast iron skillet, check at 30 minutes to see if the cornbread is done. Ovens will vary.
- Let cool for 10 minutes before serving
