Hot Cocoa Brownie Cookies
On the 4th day of Cookie Week, my true love sent to me.. Hot Cocoa Brownie Cookies!
If you’ve been around for a while, you may have seen my Buckeye Brownie Cookies. They have a soft, fudgy brownie cookie base that I used here for these Hot Cocoa Brownie Cookies.
They are easily customizable with the seasons. This time I wanted to make a Hot Cocoa inspired treat so I topped them with mini marshmallows and peppermint bits to give them a festive twist.
It’s an easy and fun way to give box brownie mix a makeover.
This recipe is all the best parts of a brownie with the comfort and flavor of hot cocoa on a cold winters day!
Hot Cocoa Brownie Cookies
Ingredients
- 1 box fudge brownie mix
- 1 egg
- 1/4 cup butter, melted
- 4 oz cream cheese softened
- ½ cup mini marshmallows
- 1/3 cup semi-sweet chocolate chips
- Candy Cane/Peppermint Bits
Instructions
- Preheat oven to 350 degrees.
- In a medium bowl and using a hand mixer, combine the fudge brownie mix, butter, cream cheese, and egg. The dough should be slightly sticky.
- Scoop the cookie dough onto an ungreased cookie sheet, smooth the edges of each to form a round cookie.
- Bake for the cookie dough 13-15 minutes.
- Let the cookies cool for 5 minutes, then transfer them to a wire rack to cool completely.
- Melt the semi-sweet chocolate chips in a microwavable bowl for 30 seconds. Stir the chocolate and melt for additional 15 seconds and stir. Repeat the 15 seconds and stirring a second time.
- Top cookies with mini marshmallows, then spoon 1/2 tablespoon of melted chocolate on top of each cookie so it covers the marshmallows. Sprinkle with candy cane bits before chocolate sets.
- Once chocolate completely sets, serve and enjoy!
