The holiday season is here and things are chaotic in the best possible way! I always keep easy-prep protein like Gorton’s Seafood Popcorn Shrimp on hand for tasty meals during the busy holiday season.
This shrimp and vegetable meal is a quick and easy dish to throw together for a nutritious meal in between the holiday cookies and casseroles. It also has Emerson’s stamp of approval so it’s toddler friendly!
Honey Sesame Popcorn Shrimp & Vegetables
Ingredients
- 1 (14oz) package Gorton’s Popcorn Shrimp
- 12oz frozen cauliflower rice
- 2 broccoli crowns, chopped and stalk removed
- 2 tbsp olive oil
- 1/3 cup honey
- 1 tsp apple cider vinegar
- 1/2 tbsp ketchup
- 1 tbsp corn starch
- 1/2 cup water
- 3 tbsp sesame seeds
- 1 tsp salt
- Green onion, chopped for garnish
Instructions
- Toss broccoli florets in olive oil, salt and pepper until well coated. Then spread evenly on one half of a large baking sheet. Add shrimp in a single layer to the other half of the baking sheet. Bake according to box instructions (flipping shrimp half way through).
- In a mixing bowl, whisk honey, ketchup, apple cider vinegar, corn starch, water and salt until well combined and thick. Then stir in sesame seeds. Set aside.
- Prepare frozen cauliflower rice according to package instructions.
- Plate prepared cauliflower rice, then top with broccoli.
- Toss cooked popcorn shrimp in honey sesame sauce. Add to plated vegetables, then garnish with green onion.
