
Each year for cookie week I try to do at least one short cut cookie recipe. This means you can have a fun, tasty and elevated cookie that looks like you spent all day baking, but in a fraction of the time and little effort. The shortcut here is using premade sugar cookie dough!


Blackberry Prosecco Sugar Cookies
Ingredients
- 1 package premade sugar cookie dough
- 1 stick salted butter, softened
- 2 cups powdered sugar
- ΒΌ cup prosecco
- 1 tsp vanilla extract
- 1 scoop blackberry powder (I use Koyah) or 1/3 cup fresh blackberries, muddled
Instructions
- Bake sugar cookies according to package instructions.
- In a stand mixer or large bowl with a hand mixer, cream the butter on high for 3-4 minutes.
- Turn the mixer to low and add powdered sugar until consistency is crumbly. Then mix on high for about 4-5 minutes or until light and fluffy consistency.
- Add prosecco, vanilla and blackberry powder/berries. Mix until well combined.
- Pipe on the inside of one cookie, then top with another cookie to make a sandwich. Add sprinkles to frosting if desired.
